This is a very versatile recipe because it can be adapted to be either sweet or savory!
What you need:
2 cups gluten free oat flour
2 tsp. baking powder
1/4 tsp salt
4 Tablespoons honey
2/3 cup milk or dairy free milk
1 cup of blueberries (may also substitute raisins, cranberries, cheese or apples)
2 Tablespoons coconut oil
2 eggs
What you do:
Mix dry ingredients.
Mix liquids and fruit or cheese
Add to dry mix, stirring lightly.
Fill 12 greased muffin tins 1/2 to 3/4 full.
Bake 15 minutes at 425 degrees.
