Soup is one of the champions of the whole foods diet. It’s so easy to incorporate loads of healthy nutrient dense food in one pot. It’s also great to use up some of those veggies that may be past their prime. This past winter when I knew I would be away from the house for the day I would warm some of this soup on the stove and add it to my thermos to take in the car. When we were ready to eat I had a vitamin packed hot meal ready and waiting for me. Soup was uncharted territory for me until I went to a friends home for lunch and tasted some of her delicious soup, inspired by her recipe I rolled up my sleeves and got to work. Wow! I wish I had tried this sooner! I discovered it was probably the most versatile easy meals I could throw together! Also, if you are on a limited diet it’s very easy to tailor to your individual dietary requirements. Just grab a knife and get to chopping! Below is my favorite recipe.
Ingredients:
1 1/2 pounds of organic ground meat of your choice ( I use turkey)
2 cloves fresh garlic
2 quarts homemade bone broth or store bought organic broth
4 small sweet potatoes
1 large onion
1/4 head of cabbage (purple or green)
3 small summer squash
2 large handfuls of spinach or kale
2 stalks celery
Celtic sea salt
Adobo seasoning
Kelp seasoning
Method:
Place some olive oil in the bottom of a large pot and brown meat with garlic and onion. Add in broth and begin to simmer. Peel Sweet potatoes. While simmering on low chop vegetables. I like to have my soup chunky and meaty and not real runny so I chop my vegetables in large chunks. Add all of the vegetables to the pot except the greens. Add in spices to taste. Simmer for an hour on low. If you aren’t happy with the consistency add a little water. 15 minutes before serving add in greens and stir.
For those on restrictive diets one of the things I like to do is heat this soup and add to a good thermos and take it with me when we’re out for the day with some fruit. When we’re ready to eat my lunch is already hot and ready and I don’t have to be concerned that I am eating something that isn’t good for me.
Variations: You can also add carrots, white potatoes or really any veggie that you like. That’s what is so great about soup! Add your own flare!
