I use to LOVE graham crackers when I was a kid and found out just recently that I still do! I love them with some sort of nut butter on them dipped in milk. I was so glad to be able to make a great gluten free graham cracker that tastes exactly like the ones I used to eat when I was young and it is so simple to make! Your kids will love helping you make these too!
What you need:
1/3 cup melted coconut oil
2 tsp. vanilla
1 tsp. baking soda
1/2 cup honey (may use less)
1/2 tsp. salt
1 1/2 tsp. cinnamon
1/3 cup milk (I use almond milk)
1 Tbsp. molasses
1 1/2 baking powder
3 1/2 cups gluten free oat flour
What you do:
Mix liquids first, except milk, then add dry ingredients alternately with milk. If sticky, add more flour. Roll out to completely cover a cookie sheet. Cut into squares and prick with fork. Bake at 300 degrees for 18-20 minutes, until edges are brown. Break squares apart and you may return to the oven with the oven turned off to allow them to toast a little bit. These freeze nicely.
