Did you know that you can whip up some milk way quicker then you can go buy it at the store and it’s cheaper and much healthier too? I have been dairy free for about a year and a half and I mainly consume almond milk and coconut milk. I was buying it at the store until I discovered how simple this can be to make at home. You only need a few ingredients and about ten minutes and you have a healthy homemade milk! Here’s how you do it!
Ingredients:
I cup of raw almonds (may use cashews or unsweetened coconut flakes)
4 cups of filtered water
1-2 Tablespoons vanilla (optional)
a pinch of Himalayan salt (optional)
6 pitted dates or other sweetener to taste (optional)
(If using dates soak for easier removal of pits)
What you do:
There are several schools of thought concerning how to prepare nuts. You may either soak the nuts overnight in salt water OR simply blanch and remove the skins. After blanching, the skins should slip off easily. If time does not permit you can just pitch the nuts in the blender without doing either but keep in mind they may not be as easy to digest that way. After preparing the nuts your chosen way add nuts to blender or Vitamix. Next add water and blend on high speed for about a minute. Place a piece of double layered cheese cloth in a strainer over a bowl or large measuring cup and add blender contents to drain milk. Squeeze pulp well removing all of the milk. If you are adding other ingredients like vanilla, salt and sweetener place back in blender and blend quickly to mix other ingredients. Your milk is now done! Add to glass container and keep in refrigerator for a week. Try to not make large amounts because this will not keep for weeks in the refrigerator. But it’s so easy to make you can quickly whip up another batch!
