We love meatloaf and it’s so simple to make! I took an old recipe and adapted it to be healthier then the old version and it turned out pretty good! It is Gluten and Dairy Free too!
What you need:
2 eggs
3/4 cup almond milk
1/2 cup GF panko crumbs
1/4 cup finely chopped onion
2 Tablespoons parsley
1/4 cup finely chopped peppers
1 tsp. salt
1/2 tsp. ground sage
1 1/2 pounds ground meat
1/4 cup organic ketchup
1 Tablespoon miso paste
What you do:
Combine eggs and milk beating eggs. Stir in panko crumbs, onion, pepper, parsley, salt, and sage. Add ground meat and mix well. Shape into a loaf and place into a shallow baking pan. Cook on 350 degrees for about 50 minutes. Combine ketchup and miso paste and spread over meat and place back in the oven for 10 minutes. Serve.
