Last night for dinner I was getting tired of the same old thing so I thought I would try something totally different. I visited the grocery store earlier that day and saw some HUGE collard green leaves and the inspiration sort of took over from there! Here is one of our new favorites!
Ingredients:
8 large collard green leaves
1 lb. of organic ground meat (I used turkey)
1 can of small red beans
1 sweet onion
3 mushrooms (any kind)
8 ounces of mild salsa
1/2 cup of cooked rice or quinoa
1 tsp. ginger
1 tsp. cumin
1 clove fresh garlic
2 tsp. Himalayan salt
What you do:
Brown meat in large pan with onion, garlic and mushrooms. Once browned add in rice/quinoa, ginger, salt, beans and salsa. Stir and simmer on low heat. Trim long stems off of collard leaves. Bring large pot of water to a boil and gently place washed leaves in pot. For smaller leaves boil for about 3-4 minutes. For large leaves boil for 5-7 minutes. When done pour off hot water and add cold water to cool them down. Remove one leaf from water and place about 2 Tablespoons of mixture in center of leaf. Roll up leaf with mixture being careful to tuck ends into the roll. Secure with a toothpick. Dip into sour cream or additional salsa. Enjoy!
